Ingredients (4 servings)
For the chicken:
- 2 large chicken breasts, sliced in half horizontally
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 2 tablespoons olive oil
For the sauce:
- 3 tablespoons butter
- 4 garlic cloves, minced
- 1 ½ cups heavy cream
- ½ cup grated Parmesan cheese
- ½ cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
1. Season and cook the chicken
Season the chicken with salt, pepper, paprika, and garlic powder.
Heat olive oil in a large pan over medium-high heat.
Cook the chicken for 4–5 minutes on each side until golden and cooked through.
Remove the chicken and set aside.
2. Make the sauce
In the same pan, melt the butter.
Add the minced garlic and cook for 1 minute until fragrant.
Pour in the heavy cream and stir well.
Add the Parmesan cheese and mix until melted and creamy.
Stir in the sun-dried tomatoes and Italian seasoning.
3. Add the spinach
Reduce the heat and add the fresh spinach.
Cook for 1–2 minutes until the spinach wilts into the sauce.
4. Combine
Return the chicken to the pan and spoon the sauce over it.
Simmer for a few minutes so the flavors come together.
5. Serve
Serve warm with pasta, rice, mashed potatoes, or crusty bread.

- Add mushrooms for extra richness.
- Use half-and-half instead of cream for a lighter version.
