This creamy Chicken Alfredo Pasta is a comforting and flavorful dish made with tender chicken, rich Parmesan sauce, and perfectly cooked fettuccine. It is an easy and satisfying meal suitable for any day of the week.
Ingredients (4 servings)
For the chicken:
- 2 large chicken breasts, sliced into thin strips
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
For the Alfredo sauce:
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ cup milk (optional, to thin the sauce)
- Salt and pepper to taste
For the pasta:
- 300 g (10 oz) fettuccine pasta
- Water for boiling
- 1 teaspoon salt
Optional toppings:
- Fresh parsley, chopped
- Additional Parmesan cheese
- Black pepper
Instructions
1. Cook the pasta
Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain the pasta and reserve about half a cup of the pasta water. Set the pasta aside.
2. Prepare the chicken
Season the sliced chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Heat the olive oil in a large pan over medium heat. Add the chicken and cook for 5–7 minutes until fully cooked through and lightly golden. Remove the chicken from the pan and set it aside.
3. Make the Alfredo sauce
In the same pan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Pour in the heavy cream while stirring. Let it simmer for 3–4 minutes, then add the grated Parmesan cheese. Stir until the sauce becomes smooth and creamy. If the sauce is too thick, add a splash of milk or some of the reserved pasta water. Season with salt and pepper to taste.
4. Combine the pasta and chicken
Add the cooked chicken back into the pan with the Alfredo sauce. Add the drained pasta and toss gently to coat the pasta evenly. Let it warm through for 1–2 minutes on low heat.
5. Serve
Serve immediately while warm. Garnish with chopped parsley, extra Parmesan cheese, or black pepper if desired.
Tips
- Freshly grated Parmesan melts better and gives a richer flavor than pre-shredded cheese.
- Do not overcook the pasta; al dente gives the best texture.
- You can substitute the chicken with shrimp or add vegetables such as broccoli, mushrooms, or spinach for variation.
